Creamy Tuscan Chicken Skillet

Introduction

The Creamy Tuscan Chicken Skillet is a fast, one-pan dinner that tastes like a restaurant favorite. Tender chicken breasts pan-seared to golden perfection are simmered in a flavorful sauce made with sun-dried tomatoes, garlic, spinach, and a touch of cream. It’s both comforting and elegant — perfect for weeknights when you want to impress without spending hours in the kitchen.

This dish is flexible: make it lighter by using half-and-half or Greek yogurt, or enrich it with a splash of white wine for depth. It pairs beautifully with pasta, mashed potatoes, or a simple vegetable side for a balanced plate.

Ingredients (serves 2–3)

  • 2 boneless, skinless chicken breasts (about 500g)
  • Salt and black pepper
  • 1 tsp paprika
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1/3 cup sun-dried tomatoes (packed in oil), chopped
  • 1 cup baby spinach
  • 3/4 cup heavy cream (or 1/2 cup half-and-half + 1/4 cup milk)
  • 1/2 cup low-sodium chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Fresh parsley, chopped for garnish

Instructions

  1. Season and sear chicken. Pat chicken dry and season with salt, pepper, and paprika. Heat olive oil in a large skillet over medium-high heat. Sear chicken 5–6 minutes per side until golden and almost cooked through. Remove and set aside.
  2. Sauté aromatics. Reduce heat to medium, add garlic to the pan and sauté 30 seconds until fragrant. Add sun-dried tomatoes and stir for a minute.
  3. Deglaze and simmer. Pour in chicken broth and scrape up browned bits from the bottom of the pan. Stir in cream, Parmesan, and Italian seasoning. Simmer gently until the sauce thickens slightly.
  4. Add spinach and return chicken. Stir in baby spinach until wilted, then nestle the seared chicken back into the sauce. Simmer 3–4 minutes until chicken reaches internal temperature of 165°F (74°C).
  5. Finish and serve. Taste and adjust seasoning. Garnish with chopped parsley and extra Parmesan. Serve with pasta, rice, or crusty bread to soak up the sauce.
